EAT.BITZ
A table-side experience that shows where a dish comes from while you are eating it, not as a report after the fact. Oracle cards, a kaleidoscope viewer, and a digital datascape connect ingredients to the biodiversity behind them.

Restaurant-supported CSA
A pilot with one farm, two hectares in Balasar, on a two-page agreement: pre-payment, a harvest commitment, planting planned together, quarterly reviews, and a clause for the year the crop fails. Written to be reused with the next grower.
Mesa Aberta
A free-meal programme for people outside the restaurant’s usual reach, currently being reworked after an initial pilot.
