Verde maps the Gigantes Verdes: any tree with a trunk more than 1.5 m round, measured 1.3 m from the ground. Over 7,400 trees mapped in Lousada alone. The acorn flour in our kitchen comes from further south, from the montado in Portugal and the dehesa in Spain, the same oak woodland on both sides of the border. LandraTech, in Azambuja, dries, shells and mills the acorns.

Through our signed collaboration protocol with Verde Associação (Lousada, May 2025), 3% of every tasting menu at venn that includes acorn is donated directly to the preservation of large trees in Portugal.
3% of tasting menu revenue, when the menu includes acorn flour, goes directly to VERDE, for large-tree preservation, new tree planting and the Gigantes Verdes mapping programme.
