summer means salads, and something bright and light. instead of couscous we crush milho painço, millet, a grain Portugal grew long before maize, until it flakes like a tabbouleh. the idea came from the Brazilian corn couscous Jéssica makes for staff meal.
beetroot, at its sweetest now, salted and aged a week for chew and mineral depth. blackberries cooked down into a tart, deep sauce that pulls the salt back into fruit. an almond and macadamia cream, a herb salad, flowers. colour and freshness at their peak, before the menu turns rich.

a cold cream for full summer, inspired by Spain but not quite a gazpacho. it is an ajo blanco, built on oats fermented for about a month, which bring a gentle sourness the dish does not usually have. it reminds Monika of Polish żurek: a little nostalgia in the bowl.
portobello is cured and deepened with porcini, and a red laver from the coast carries the salt. a coriander and parsley gremolata cuts across all of it, with a gluten-free almond cantuccini to scoop toward the end. substantial, but cold and bright.

Chícharo. An ancient Portuguese pulse, today rarely used. Shaped somewhere between chickpea and lupin, with a soft, mild flavour that readily takes on spices.

the first heritage pulse of the menu. chickling vetch, an ancient Portuguese bean somewhere between chickpea and lupin, soft and mild and glad to take on spice; we shape it into a falafel. beneath it, coração de boi tomatoes at the peak of the season, pressed into a clear water packed with their own umami.
tahini mayonnaise with black and white sesame gives a gentle bitterness; a red currant chutney, sharpened with ginger, gives the sweet-sour lift. fennel and flowers to finish. it sets the summer register at once: clean, acidic, colourful.

Bolota. The oak-tree seed, traditionally used in Portuguese cooking, with an earthy and slightly bitter flavour.
Cuscos transmontano. A traditional hand-rolled couscous from Trás-os-Montes in north-east Portugal, made from wheat and dried in the sun; larger and more irregular than the North African kind.
A soft, spreadable, spicy sausage from Calabria in southern Italy; ours is vegan, built from Trás-os-Montes couscous and barbela wheat.

the heart of the menu. a triple-ancestry pasta cut into ribbons: acorn flour, khorasan, and barbela. bolota, acorn, was widely eaten in Portugal until the forest came to stand for poverty; putting it back on the plate is the argument of the dish.
a vegan 'nduja', spreadable and gently spicy, built from hand-rolled cuscos transmontano and barbela. smoked paprika, a note of chilli, concentrated sun-dried tomato, walnut, and the bitter-earthy signature of the acorn underneath it all.
a percentage of the proceeds of this dish go towards associação verde.

the bridge, and the darkest passage on the menu. an al pastor idea with the meat swapped for wild leaves fried to the same gelatinous crunch; they change with what the foragers and farms bring in.
the mole is built on THIC, the cacao-free chocolate made from upcycled oat, with smoked morita and ancho beneath it. sweet, smoky and volatile against a raw green salsa and lime. it sets up the final anchor by contrast.

the final anchor, and comfort food, unapologetically. bomba rice, the kind grown in Portugal, few people know that, and Venn has made the argument since the box days. tamari and miso carry the umami; aubergine is roasted and charred; plums cooked down with clove, allspice and juniper into something forested and warm.
over it, a homemade kimchi ice cream made from the stems and tops that never made the menu, cold and sharply acidic. the broadest the menu gets on the palate, and its biggest swing in temperature. it grew out of Lucas's kimchi leeks, and the way kimchi sits with mint.

the indulgent one. a millionaire's shortbread told through white corn and THIC, the cacao-free chocolate, with the sweetness moving away from refined sugar and toward dried figs and dried fruit.
a thick alt-'choc' ganache, miso ice cream, popcorn, and sea salt, because sweet and salt together wake the most taste buds at once. a childhood dream on the plate.

the fruit is not ready, so the leaf stands in for it: oat milk infused with fig leaf, reading almost like coconut until it does not. a cold dessert for a hot, hot summer.
summer fruit poached in sugarcane honey, no refined sugar, to cut the cream. pine nuts from the Trás-os-Montes region, toasted and caramelised in honey cane for a thin candied shell over the fat of the nut.

the dessert closest to Monika's heart, and a bold one: potato in a dessert. in Poland the knedel is a lunch, a young-potato dough stuffed sweet or savoury; here the season decides the stone fruit inside, plum, apricot, whatever is ripe.
served with an almond 'sour cream', a gentle sugarcane honey glaze, and elderflower. asked once which recipe she would give away as a staple, this was Monika's answer. a soft, sweet place to end.
